Huevos Ahogados
Introduction:
Huevos Ahogados is a Mexican classic. This dish is very easy to make and it only takes a few minutes to prepare.
Eggs poached in a simple tomato based Mexican sauce
This recipe serves 2.
Ingredients:
- 6 eggs
- 1/4 onion
- 3 cloves of garlic
- 16 oz can of peeled tomatoes, S&W "Ready Cut" is a good choice
- 4 ts chili powder
- 2 tbs cooking oil
- Salt
- Refried beans and tortillas optional as a side
Pre-cooking:
- cut the onion in a few chunks
- Use a blender to make a sauce out of the onion, garlic, tomatoes and chili powder. Add water if you need to
Cooking:
- Set tall frying pan in mid-high heat
- Add 2 tbs of oil to frying pan
- Add the sauce and let the sauce cook for a few minutes, stir a few times
- Taste the sauce and add salt as needed
- Now add the eggs, craking and dropping in one egg at a time. It doesn't matter if some eggs break
- Cook in low heat for about 10 minutes, so that all eggs are fully cooked
Tips:
Serve with refried beans and tortillas. Add any kind of chile to the sauce if you like
